Chorizo Con Huevos
Chorizo Con Huevos can be served as the center piece of a Mexican breakfast and served with a variety of sides. It also can be used as a filling for breakfast tacos, burritos or enchiladas.
Ingredients:
1 12oz package APCO Chorizo of choice, casings removed
1 small onion diced
2 Jalapenos diced (seeds removed optional)
8 large well beaten eggs
1 TBSP high heat oil (avocado oil, vegetable oil, or oil of choice)
Tortillas
Toppings (optional):
Salsa
Cilantro
Refried beans
Shredded Cheese
Directions:
Sautee diced onions and jalapenos in oil until onions are translucent and aromatic.
Add in APCO Chorizo and cook until browned. (OPTIONAL blot with paper towels to remove excess fat).
Add in beaten eggs and cook until set. Serve with tortillas and toppings of your choice.
